Although the official recipe dates back to the mid-1800s, pesto quickly became the symbol of Ligurian cuisine and one of the most loved Italian condiments in the world, characterised by its unmistakable fresh basil aroma. Pesto production has inspired many creations with different vegetables: here we bring you the courgette version, which has a fresh and light taste

OIL
Our oil is produced in the center of Puglia region, among centuries-old olive groves in an old mill born in the early 1900s, where the art of milling has been handed down for three generations. The hand-picked Apulian olives, the washing, the crushing with stone millstones and the cold extraction give birth to this extra virgin olive oil with a delicate taste.

SALT
A quick journey to Trapani has made us see the historical “Saline di Galia”, which is located amongst the natural reserves of Trapani and Paceco. Here the salt is processed according to the rituals of the past, respecting the natural times of crystallization of this mineral, essential for our dishes in the cooking.
